This book changed my life. My whole life until 10 or 15 years ago, I NEVER ate vegetables. I hated them. I didn’t touch one. Then I started being a little more civilized, tasting them sometimes just to co-exist with other people, still disliking them. Then my body broke down and I had to change lots of things, including the way I ate, but it wasn’t until I read this book, Eat for Health, that I truly completely changed the way I eat every day, and I love it. This book educated me and made the first compelling case for why eating mostly fruits and vegetables is so important, and then it gave me a path/process to shift from the way I was eating to being truly healthy. It’s amazing but now I crave great, healthy foods (like the smoothies I drink every morning, or the Trader Joe’s prepared salads I eat for lunch) and it’s easy/automatic for me to eat healthily. Requires dedication but well worth it. This book puts healthy eating into a very current, contemporary format which helps us to sift out the fad diets from the reality of solid laboratory research. We all already know what foods are best for us but this helped me organize everything into a useable plan. Yes, it involves some supplements and buying of seeds, etc. but it is truly manageable. My health is not good from years of being overweight, inactive, etc. so I looked for something other than another diet. Dr. Fuhrman’s concept of maximizing nutrients was the answer. It has taken me awhile to shift from ‘diet’ meals to health meals but I’m slowly making the change and I can feel a definite loss for the cravings I had before. I’m Sold!!!! I first saw Dr. Fuhrman on a PBS special. He caught my husband’s interest, so I paid attention. I am usually the one who researches health & nutrition and am inspired only by a select few ‘eating lifestyles’.
